Camembert, Pink Fir and Bacon Fondue

In Potato Recipes, Recipes by Nicki Crawley

Ingredients

Pink Fir Apple Potatoes (La Ratte work well too or baby Nicola)
French Bread Boule
Baking Camembert
Garlic slivers
Olive oil
Rashers of streaky bacon
Chives

Method

Boil your Pink Fir Apple Potatoes until tender.
Drain and leave to cool slightly.
Wrap each potato with a rasher of bacon and place on a baking dish.
Drizzle with oil and bake for 30mins, turning occasionally.
You may need to pin them with a toothpick to stop them unravelling.
Meanwhile, cut the top off your bread boule and set aside.
Pick out the insides to make a camembert shaped hole.
Place your camembert in and slash the top a few times. Push your garlic slivers into the slits. Drizzle with oil and place into the oven with your potatoes.
Put your bread lid back on and bake for about 20mins until the cheese is oozy! (180c)
Take the bread lid off and cut the skin of the cheese away to create a dunking zone!
Sprinkle over chives, serve and get dunking!
