Ingredients

Mini King Edwards (ask for baby ones when you order)
Olive Oil
Butter
Salt & Pepper

 

Method

Place our baby King Edwards on a wooden spoon to prevent slicing straight through.
Make a series of 2mm slices across the potatoes.
Place on a baking tray or dish.
Brush with olive oil and butter – make sure it gets in between the slices.
Season to your taste. We used salt and pepper on this occasion but add what ever herbs and flavourings you like!
Roast in oven until golden and cooked through (about 30mins at 200c).
Serve as a side dish with any meal – delicious.
